I hate cold weather. It’s one of the main reasons I live in Texas. I hate that everything dies. I hate that I have to wear so many clothes. I live on my patio. I actually spend very little time in my house. So what to do when the world turns cold and grey? Cook. Cook something that warms you up.
Spagetti with meatballs. This is not Italian pasta. This is Texans style with lots of heat.
a combination of Italian sausage (removed from its casing) and ground chuck. Add diced garlic, jalapeño, and diced onion. Roll in to 2″ balls. Brown them in sauce pan until they have a nice brown crust, then pull them out and set them aside. You don’t have to cook them through, as they will finish cooking in the sauce.
in the pan that you cooked the meatballs in, sauté some diced onion, a tbs of tomato paste and garlic for about a minute over a medium high heat. Add about a cup of red wine. Scrape up the fond in the bottom of the pan and reduce by half. Now throw in a can of tomatoes. I use Cento whole tomatoes and crush them with my hand when I add them. Throw in a bay leaf or two, some oregano, some thyme, and some fennel (ground). Add a good amount of crushed red pepper also. Let this cook for about thirty minutes on simmer, then add the meatballs. Let this cook for another thirty minutes at a simmer.
Cook up some spaghetti. I’m not going to go in to a pasta cooking class here. Just cook some spaghetti. Now put you noodles in a big bowl, pour the sauce over the top, add some fresh grated Parmesan, and you have a meal that will get you through the coldest night.
